Cooking In The New Air Fryer – Jim Says “Chicken Good”
We were so excited after getting our new Air Fryer for Christmas this year, what we didn't know is that there is a definite learning curve. Air fryer, by the way, is nothing more than a Convection Oven. Air Fryer is just the new buzz-phrase being used to teach young people about a piece of technology that's been around for probably 100 years or more. Convection ovens are used in professional kitchens every day, the forced air circulation is what makes them cook so fast.
We had a terrific success last night as my wife Donna found a simple recipe online for "Air Fryer Chicken." It actually cooked faster than it said it would in the recipe. So, with a couple of adjustments, here's what she did last night, and might I say it was very good. As good as grandma's fried chicken? No. But grandma's fried chicken was not good for you. It was, however, very tasty.
By the way, we have a Cuisinart TOA-60 Convection Toaster Air-Fryer, your cook times may be slightly different. Keep an eye on it and an internal temperature probe handy.
Air Fryer Chicken Thighs
(for toaster-oven type air fryer)
- 8 Boneless, Skinless Chicken Thighs
- Extra Virgin Olive Oil
- Salt, Pepper, Favorite Italian Spice Blend
Line the baking tray of the air fryer with foil, and set the fryer to Convection Bake. Remove the grate and basket. The tray will be placed in position 2 (bottom position) of the fryer.
Season each side of thighs with a drop or two of olive oil (rubbed in), salt, pepper (we used white pepper), and your favorite Italian (or other) type seasoning blend. We used one called Tuscan Garlic, as well a gentle sprinkle of ground coriander.
Roll the thighs back up and place on a foil-lined baking tray, then place in the bottom baking position. Bake at 400 degrees for approximately 15 minutes or until chicken tests at least 165 degrees F internally.
