How funny that today is Tax Day and Cheese Ball Day too. Way too many jokes about being a cheese ball if you haven’t filed your taxes yet! I didn’t realize that there was actually a set aside every year for the cheese ball! Yep, every year on April 17.

According to Holiday Insights, no one knows who started it or why. Even though it is considered a national day, there are no congressional records to prove it. Which is a good thing, considering if Congress really did spend time voting on this, I’d be pretty irked!

All that set aside, we all love cheese balls! I mean come on! Ever been to a gathering or party and not see someone cutting the cheese? Ok, maybe that wasn’t the best way to phrase that. :)

Here is a great and easy Cheese Ball recipe from Allrecipes.com

Easy Cheese Ball II

You’ll need:

2 (8 ounce) packages cream cheese, softened

1 (1 ounce) package ranch dressing mix

2 1/2 cups shredded Cheddar cheese

1 1/2 cups chopped pecans

Then in a medium size bowl, mash cream cheese. Mix dressing mix and Cheddar cheese into the cream cheese. Shape the mixture into a ball. Roll the ball in the chopped nuts. Refrigerate covered until ready to serve! And don’t forget the crackers!
